No one around the dinner table is complaining...well, except for Ty. He'd prefer to have some version of pasta every night of the week!
Today's recipe is SO EASY, yet so mouth-watering delicious.
This recipe comes from Just a Pinch , but because of the limited instructions, I'll save you the time and put it below.
Sweet & Spicy Bacon Chicken
All you need is:
ChickenBaconSalt, Pepper, Garlic Powder, Chili PowderBrown Sugar
Cook your bacon in the oven at 400 for about 5 minutes. You still want it to be pliable so that you can wrap it around the chicken (I used boneless/skinless chicken tenders).
While your bacon is cooking, put a cooling rack inside a foil lined pan. This allows all the bacon drippings to run off your chicken and into the foil (easy clean-up!) Lay your chicken on the rack and sprinkle with salt, pepper, garlic powder, and chili powder. I did a light sprinkle of each and got amazing results. When the bacon is done, wrap each chicken tender in bacon and then - here comes the WOW factor - roll the bacon wrapped chicken (liberally) in brown sugar.
Bake at 400 for 30 minutes.
The blend of caramelized flavors had every boy licking their fingers - even Tyrus. He only gave my chicken a 1, but deemed the bacon worthy of it's own category.
We served this up with salad, biscuits, and strawberries, but the chicken was the true talk of the table.

I have a cookbook that my mom gave me 20 years ago. It was one that had blank pages that she wrote all of her recipes in. I have added recipes that are worthy to it as well. It is one of my most prized possessions. So nice to have everything in one place and of course a treasure because it started with my mom and her recipes from my childhood.

Tonight (since its Lent and we don't eat meat on Fridays) we are having a newer recipe I found not too long ago that everyone LOVES, German pancakes😋
I went pretty liberal with the brown sugar, but didn't find it too sweet. You could, definitely, just sprinkle a little bit on top instead of rolling the chicken. The zip of the chili powder offers a good balance. Let me know if you try it!

ReplyDeleteI kept the sides easy. This was a meal that I had to prepare, quickly, because we had a home study visit the night we ate it. We had salad, strawberries, and biscuits!
DeleteIs Ty a picky eater because you cooked different things for him when he was the only child. Sometimes you just have to try and tell hi. It's something he likes and see what happens. Our children had caribou meat and loved it because we told them it was roast beef.
ReplyDeleteNo, I've always only cooked one meal for dinner. He was never picky when he was younger, it's something that has gotten worse over the last year. Usually, he just boycotts meat. He loves veggies, so that's what he fills up on. He's a stinker!
